Last night I decided to try my hand at spaghetti Bolognese. I found a few recipes online and tweaked them a little.
One large onion diced
Two garlic cloves diced
2 large carrots diced
2 celery stalks diced
4 strips of bacon
Slowly cook chopped bacon till soft and add the onions, carrots, garlic and celery.
As that is slowly cooking measure out
1 tsp Thyme
2 bay leaves
1/2 tsp Oregano
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp salt
2 tsp fresh ground pEpper
Once the onion is opaque add the spices and simmer for two minutes.
1 pound ground beef
1/2 pound pork sausage (I used spicy Italian sausage.
2 tsp tomato paste
1 can tomato sauce
1 can beef stock
1 cup of red wine
2 cans of crushed tomatoes.
Next add the beef and sausage to onion tomato mixture and cook until no longer pink.
Add tomato paste and sauté with meet and vegies. After about three minutes add the wine to deglaze the pan of all the yummy meet and vegie bits.
Next add tomatoes, tomato sauce and beef stock. Bring to a boil and then turn down to medium low heat and let simmer for 1.5-2 hours or until half the liquid is simmered down. Make sure you stir on occasion so nothing burns to the bottom.
1/4 cup heavy cream
2 tsp unsalted butter
At the very end add the cream, butter and parsley and cook two more minutes.
Serve over your favorite pasta cooked al dente with fresh grated Parmesan, garden salad and a nice bottle of Chianti.
